Shoka belongs to the high-end Junmai Daiginjo wine line, which uses high-quality Yamada Nishiki rice. Produced with rice content after grinding is 50% (Super flat rice grinding). Yamada Nishiki is the highest-grade and most expensive type of rice, and is the most used to make high-quality Daiginjo sake. This type of rice produces sake with a complex, smooth, and delicious flavor. Yamadanishiki rice has good water absorption properties and dissolves quickly during fermentation. As a result, wine is widely preferred by many winemakers. Since this is a soft rice, the rice abrasion process must be carried out slowly and carefully, avoiding breakage.

How to Enjoy Daishichi Shoka Sake

Sake Shoka should be chilled before drinking at about 12 - 15°C or enjoyed hot at 40 - 45°C.
